Matcha and green tea are rich in polyphenols—mainly catechins—and other substances such as rutin, vitamin C, amino acids, caffeine, soluble dietary fibres, fat-soluble vitamins, minerals and saponins.

The most potent and well-studied catechin is epigallocatechin-3-gallate (EGCG). EGCG is absorbed in the small intestine, distributed to tissues including the liver, and can modulate gene expression and oxidative stress via single-electron transfer reactions.
