PPH is the starting material for preparing PPH-M via Maillard glycosylation.

PPH was prepared by digesting 5% (w/v) pea protein solution with Alcalase (1000 U/g) at pH 8.5 and 50 °C for 2 h. The optimal glycosylation conditions with D-xylose were: pH 9.0, 90 °C, 3 h, glycopeptide mass ratio of 2:1, and PPH concentration of 3%.
